Ingredients:
- 8 large Wicked Hots Jalapenos
- 100 g cream cheese
- 75g cheddar, grated
- 75g mozzarella, grated
- 1 teaspoon hot sauce
- 8 rashers streaky bacon
To serve: Wicked Hots Salsa, Mild or Medium, or Hot
Method:
- Preheat the oven to fan bake 200C. Cut each jalapeno in half lengthwise and scrape out the seeds.
- Combine the cream cheese, cheddar, mozzarella and hot sauce. Season to taste with salt and pepper. Fill the jalapeno halves with the cheese mixture.
- Halve each rasher of bacon and wrap around each filled jalapeno, ensuring the ends are on the bottom side of each jalapeno – this will stop the bacon unrolling as they cook. Place a cooling rack over an oven tray - this prevents the jalapenos from rolling over. Place the jalapenos on the rack. Bake in the preheated oven for 15 to 20 minutes until the bacon is crispy.
- Serve hot with Wicked Hots Salsa.
Tip:
Replace the cheddar with soft goats’ cheese
