Bacon Wrapped Jalapeno Poppers

Cooking time: 20 minutes

 

 Ingredients:

  • 8 large Wicked Hots Jalapenos
  • 100 g cream cheese
  • 75g cheddar, grated
  • 75g mozzarella, grated
  • 1 teaspoon hot sauce
  • 8 rashers streaky bacon 

To serveWicked Hots Salsa, Mild or Medium, or Hot 

 

 Method:

  1. Preheat the oven to fan bake 200C. Cut each jalapeno in half lengthwise and scrape out the seeds.
  2. Combine the cream cheese, cheddar, mozzarella and hot sauce. Season to taste with salt and pepper. Fill the jalapeno halves with the cheese mixture.
  3. Halve each rasher of bacon and wrap around each filled jalapeno, ensuring the ends are on the bottom side of each jalapeno – this will stop the bacon unrolling as they cook. Place a cooling rack over an oven tray - this prevents the jalapenos from rolling over. Place the jalapenos on the rack. Bake in the preheated oven for 15 to 20 minutes until the bacon is crispy.
  4. Serve hot with Wicked Hots Salsa.

 

Tip:

Replace the cheddar with soft goats’ cheese
