Chilli Lime Mojitos

Serves 2

  • 1 - 2 limes, cut into wedges
  • 1 handful fresh mint leaves
  • 1 Wicked Hots Jalapeno, sliced
  • ¼ cup (4 nips) white rum
  • ¼ cup (4 nips) sugar syrup* or to taste
  • Ice cubes
  • Soda water

 

Method:

  1. Place a few mint leaves, some lime wedges and some sliced jalapeno into each glass. Use a muddler and crush to release lime juice and mint oils, and crush jalapeno slightly.
  2. Add 2 nips white rum to each glass and 1- 2 nips sugar syrup, according to taste. Fill each glass almost to the top with ice, then top up with soda water. Stir, taste and add more sugar syrup if desired.

 

*To make a sugar syrup, place 1 cup sugar and 1 cup water into a small saucepan. Bring to the boil to dissolve the sugar. Allow to cool before using.

Jalapeño Lime Syrup

Makes approx. 1 cup

 
Method:

  1. Place the sugar, water, sliced jalapeños and lime zest into a small saucepan. Bring to the boil then simmer for 5 minutes. Remove from the heat and set aside to cool.
  2. Once cool, strain through a sieve into a jar or container. Discard the jalapeños and lime zest. Refrigerate until required.
