Ingredients:
- 1 tablespoon vegetable oil
- 2 heads pak choi, cut in half lengthwise
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 200 g cooked noodles
- 2 tablespoons Chilli and Garlic Oil*
- 2 eggs
- 2 teaspoons toasted sesame seeds
Method:
- Heat 1 teaspoon of the vegetable oil in a wok or frying pan over medium high heat. Add the pak choi with a splash of water and stir fry for 1 minute. Cover with a lid and steam for a further minute. Set pak choi aside.
- Add another teaspoon of oil to the wok or pan with the soy sauce and sesame oil. Heat for a few seconds over medium high heat then add the noodles and toss for a few minutes until the noodles are heated through. Toss in 2 teaspoons of the chilli and garlic oil.
- Divide noodles between two bowls and place pak choi alongside. Keep warm.
- Add the remaining teaspoon of oil to the wok or pan. When sizzling, crack in the eggs and fry until crispy around the edge.
- To serve, top each bowl with an egg, drizzle over remaining garlic and chilli oil and sprinkle with sesame seeds.
