Chilli Noodles with Crispy Chilli Fried Eggs

Serves 2

Preparation time: 10 minutes

Cooking time: 10 minutes

 Ingredients:

  • 1 tablespoon vegetable oil
  • 2 heads pak choi, cut in half lengthwise
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 200 g cooked noodles
  • 2 tablespoons Chilli and Garlic Oil*
  • 2 eggs
  • 2 teaspoons toasted sesame seeds

 Method:

  1. Heat 1 teaspoon of the vegetable oil in a wok or frying pan over medium high heat. Add the pak choi with a splash of water and stir fry for 1 minute. Cover with a lid and steam for a further minute. Set pak choi aside.
  2. Add another teaspoon of oil to the wok or pan with the soy sauce and sesame oil. Heat for a few seconds over medium high heat then add the noodles and toss for a few minutes until the noodles are heated through. Toss in 2 teaspoons of the chilli and garlic oil.
  3. Divide noodles between two bowls and place pak choi alongside. Keep warm.
  4. Add the remaining teaspoon of oil to the wok or pan. When sizzling, crack in the eggs and fry until crispy around the edge.
  5. To serve, top each bowl with an egg, drizzle over remaining garlic and chilli oil and sprinkle with sesame seeds.
