Jalapeño Lime Syrup and Margaritas

Nothing offers a taste of summer quite like margaritas – and this fresh jalapeño recipe adds something a little spicy to a refreshing summer staple.

 

Jalapeño Lime Syrup

Makes approximately 1 cup

 
Ingredients:

 
Method:

  1. Place the sugar, water, sliced jalapeños and lime zest into a small saucepan. Bring to the boil then simmer for 5 minutes. Remove from the heat and set aside to cool.
  2. Once cool, strain through a sieve into a jar or container. Discard the jalapeños and lime zest. Refrigerate until required.
  3. Tip – remove the seeds if you want a less spicy version.

 
 

Spicy Jalapeño Margaritas

Serves 2 

 
For rims:

  • 1 tablespoon fine salt
  • ½ teaspoon chilli powder
  • 1 lime wedge 

 
Ingredients:

  • ¼ cup (4 nips) tequila
  • ¼ cup (4 nips) fresh lime juice
  • 3 tablespoons (3 nips) orange liqueur
  • 2 tablespoons (2 nips) Jalapeño Lime Syrup

 
To serve:

  1. Extra ice
  2. 1 Wicked Hots Jalapeño Chilli, sliced
  3. Lime wedges 

 
Method:

  1. To salt the rims of the glasses, combine the salt and chilli powder in a small saucer. Rub a lime wedge around the rim of the glasses then dip into the salt mixture so the entire rim is covered.
  2. Fill a cocktail shaker with ice then add the tequila, lime juice, orange liqueur and syrup. Shake until the outside of the shaker feels cold.
  3. Strain the mix into the prepared glasses over fresh ice. Garnish with sliced jalapeños and lime wedges.

 
 

Watermelon Jalapeño Margaritas

Serves 2

 
Ingredients:

  • 1 cup chopped watermelon

 
For rims:

  • 1 tablespoon fine salt
  • 1 lime wedge

 
Ingredients:

  • ¼ cup (4 nips) tequila
  • ¼ cup (4 nips) fresh lime juice
  • 2 tablespoons (2 nips) Jalapeño Lime Syrup 

 
To serve:

  1. Extra ice
  2. 1 Wicked Hots Jalapeño Chilli, sliced
  3. Lime wedges

 
Method:

  1. To make watermelon juice, blend the watermelon in a food processor until smooth. Strain into a container through a fine sieve. Refrigerate until required.
  2. To salt the rims of the glasses, place the salt into a small saucer. Rub a lime wedge around the rim of the glasses then dip into the salt so the entire rim is covered.
  3. Strain the mix into the prepared glasses over fresh ice. Garnish with sliced jalapeños and lime wedges.
