Burger with Wicked Hots Purple Scorpion Hot Sauce

Purple Scorpion Smash Burger with Crispy Onions

The ultimate double-patty smashburger loaded with American cheese, crispy fried onions, crunchy lettuce, and a fiery finish from Wicked Hots Pickled Jalapenos and Purple Scorpion Hot Sauce. Fast, bold, and packed with flavour.

Preparation time: 20 minutes 

Cooking time: 10 minutes 

Crispy onions:

1 medium onion, thinly sliced
¾ cup buttermilk
¾ cup flour
½ teaspoon salt
Freshly ground black pepper
Vegetable oil for deep frying
400 g beef mince, about 20% fat
8 slices American cheese
4 hamburger buns, split open and toasted
Lettuce 
Wicked Hots Pickled Jalapenos 
Wicked Hots Purple Scorpion Hot Sauce

 

1.     For the crispy onions, combine the sliced onion and buttermilk and soak for 10 to 20 minutes.

2.     Place 2 to 3 cm of oil into a medium pan (or fill a deep fryer) and heat to 180C. While oil is heating, combine the flour, salt and pepper in a shallow bowl. Remove the onions from the buttermilk and drain well. Gently toss in the flour mixture, separating the onions so they don’t clump together while cooking. Cook the onions in batches for 2 to 3 minutes or until crispy and golden. Drain on paper towels and set aside.

3.     Place a large cast iron or stainless steel frying pan over a medium high heat. While pan is heating, divide the mince into 8 equal sized balls. Flatten the balls slightly.

4.     Place 4 meat patties into the preheated frying pan. Using a metal spatula, immediately smash into thin patties, getting them as thin as possible. Season liberally with salt and pepper. Cook for about 2 minutes, until the patties are well brown. Using a metal spatula, carefully scrape the patties off the pan and flip them. Lay a piece of cheese on each patty then cook for a further minute. Repeat with remaining patties and cheese.

5.     To serve, place lettuce and 2 patties onto each toasted bun base, cheese side up. Top with crispy onions, some Wicked Hots Jalapenos and Wicked Hots Purple Scorpion Hot Sauce. Add the bun top.

 

Tip: mix Purple Scorpion Hot Sauce with mayo for slightly less kick!
