Ingredients:
- 300g jar Wicked Hots Salsa, Mild or Medium, or Hot
- 1½ cups cooked shredded chicken
- 4 large flour tortillas
- Large handful fresh coriander, roughly chopped
- 1 ½ cups grated cheese
- Oil spray
To serve:
- Remaining Wicked Hots Salsa
- 2 teaspoons toasted sesame seeds
- Coriander sprigs
- Lime wedges
Method:
- Combine ½ jar of the salsa with the shredded chicken. Top half of each tortilla with ¼ of the chicken salsa mixture, some coriander and ¼ of the cheese. Fold over like a half moon.
- Spray the base of a heavy based flat pan lightly with oil spray. Toast each quesadilla for 2 minutes on each side, until golden and crisp and the cheese starts to ooze.
- Cut into wedges to serve. Dollop over extra salsa and sprinkle with sesame seeds. Serve with coriander sprigs and lime wedges.
