Ingredients:
- 2 x 250g homemade pizza doughs*
- 300g jar Wicked Hots Salsa, Mild or Medium, or Hot
- 125g fresh mozzarella, well drained
- Fresh basil leaves
- 1 ½ cups grated cheese
- Olive oil for drizzling
Method:
- Preheat the oven to 240C°. Line two baking trays with baking paper.
- Shape each dough into a thin round approximately 25cm in diameter and place onto the baking trays. Top each dough with half of the salsa. Tear the mozzarella into pieces and divide between the bases. Top with a few basil leaves.
- Bake, one at a time, for 8 to 10 minutes, until the crust is golden with spots of brown.
- Drizzle with a little olive oil and a few more basil leaves.
*Pizza Dough
Makes 2 pizza doughs
Ingredients:
- ¼ teaspoon dried yeast
- 175 ml warm water
- 250 g ‘00’ flour
- 5 g salt
Method:
- Place the yeast and 1 tablespoon of the water into a small bowl and set aside for 10 minutes.
- Place the flour and salt into a large bowl. Add the yeast mixture and remaining water and mix by hand until just incorporated. Tip out onto a floured surface and knead for 10 minutes, until smooth. Transfer to a clean oiled bowl and turn to coat the dough. Cover and rest until the dough is approximately double its original volume, about 3 to 4 hours.
- Turn the dough out onto a lightly floured surface and knead lightly. Divide into two portions.
