Ingredients:
- 500g spaghetti
- ¼ cup olive oil
- 4 large cloves garlic, thinly sliced
- 2 Wicked Hots Cayenne Chillies, finely chopped
- 1 teaspoon finely grated lemon zest
- ¼ cup chopped parsley
To serve:
- Grated parmesan
- Extra olive oil to drizzle
Method:
- Cook the spaghetti in a large saucepan of boiling salted water following packet directions, until almost al dente. Drain.
- Meanwhile, heat the olive oil in a large frying pan over low heat. Add the garlic and cook gently for 4 to 5 minutes, without colouring the garlic. Add the chillies and cook for a further 1 to 2 minutes.
- Drain the spaghetti, reserving some of the cooking water. Add the drained spaghetti to the pan with the lemon zest and about ½ cup of the cooking water. Stir to combine. Remove from the heat and stir in the parsley. Season to taste.
- Serve with grated parmesan and a drizzle of olive oil.
