Spaghetti with Chilli, Garlic and Parsley

Serves: 4
Preparation time: 15 minutes
Cooking time: 20 minutes

 
Ingredients:

  • 500g spaghetti
  • ¼ cup olive oil
  • 4 large cloves garlic, thinly sliced
  • 2 Wicked Hots Cayenne Chillies, finely chopped
  • 1 teaspoon finely grated lemon zest
  • ¼ cup chopped parsley

 
To serve:

  • Grated parmesan
  • Extra olive oil to drizzle

 
Method:

  1. Cook the spaghetti in a large saucepan of boiling salted water following packet directions, until almost al dente. Drain.
  2. Meanwhile, heat the olive oil in a large frying pan over low heat. Add the garlic and cook gently for 4 to 5 minutes, without colouring the garlic. Add the chillies and cook for a further 1 to 2 minutes.
  3. Drain the spaghetti, reserving some of the cooking water. Add the drained spaghetti to the pan with the lemon zest and about ½ cup of the cooking water. Stir to combine. Remove from the heat and stir in the parsley. Season to taste.
  4. Serve with grated parmesan and a drizzle of olive oil.
