Wicked Fish Burger with Hello Yellow Hot Sauce

Serves 4

Preparation time: 15 minutes 

Cooking time: 6 minutes 

 

Pickled Red Onion:

1 small red onion, finely sliced

1 Wicked Hots fresh Jalapeno, finely chopped

Juice of 1 lime

½ teaspoon sugar

 

½ cup flour

1 – 2 eggs, lightly beaten

1 cup panko breadcrumbs

4 small fish fillets

Oil for frying

4 hamburger buns, split open and toasted

Shredded iceberg Lettuce

Wicked Hots Hello Yellow Hot Sauce

 

1.     For the pickled red onion, place the red onion, jalapeno, lime juice, sugar and a pinch of salt into a small bowl. Mix well and set aside for 15 minutes to lightly pickle.

2.     Prepare 3 bowls for dipping: one with flour, one with beaten egg, one with breadcrumbs combined with ¼ teaspoon each of salt and pepper. Dip each fish fillet in flour, then egg, then breadcrumbs.

3.     Heat about 1 cm of oil in a frying pan over medium heat. Once hot, cook the fish for 2 to 3 minutes on each side, until golden and cooked through.

4.     To serve, place lettuce and a fish fillet onto each toasted bun base. Top with pickled red onion and a good drizzle of Wicked Hots Hello Yellow Hot Sauce.
